Just a girl who loves her carbs!!!!

I’m going to dedicate my next review to my favourite Italian spot in Vancouver! Di Beppe has been a favourite of mine for years. The homemade pasta and pizza is an absolute must when you go and I always pair it with my favourite bottle of Tempranillo.

We are spoiled in Vancouver with the amazing selection of restaurants and different cuisines that fill the city. One thing that Vancouver does the best is Italian. There are so many fantastic Italian spots where the pasta is created with so much love.

Di Beppe is inspired by the Italian immigrant’s desire to share a piece of home while living abroad. The food is made with love, with the best ingredients that are a gift to be shared, savoured and most importantly, enjoyed slowly over time.

My favourite dish is the Carbonara. Italian carbonara pasta is a classic Roman dish known for its simplicity and rich, comforting flavours. It typically consists of al dente spaghetti or bucatini pasta, coated in a creamy, silky sauce. The key ingredients include pancetta or guanciale (cured pork jowl), eggs, Pecorino Romano cheese, black pepper, and a touch of starchy pasta cooking water. The sauce is created by mixing beaten eggs with grated cheese, which thickens and coats the pasta when tossed together.

The result is a luscious, velvety pasta dish that perfectly balances the richness of the egg and cheese with the saltiness of the pork and the bite of the pepper. Carbonara is a celebration of Italian culinary tradition and a true comfort food.
